Ingredients
Instead of rice
  • 1 cup quinoa Ojio raw organic
  • 2 cups water
Spicy Almond Pate'
  • 1 cup almonds soaked, Ojio unpasteurized
  • 4 tbsp scallions chopped
  • 2 tbsp ginger chopped
  • 1 tbsp wasabi powder
  • 1/2 tsp himalayan salt Ojio fine ground
Marinated Shitake Mushrooms
Filling
  • 1 whole red bell pepper sliced
  • 1 whole carrot peeled and sliced
  • 1/2 whole cucumber sliced
  • 1 whole avocado cubed
  • 1/2 cup micro green sprouts

Instructions
Quinoa
  1. Boil water, add quinoa, stir, reduce heat and simmer for 10-20 minutes.
  2. While cooking quinoa, combine yacon syrup and Ojio Aminos Sauce in a small dish and lightly brush this mixture on shitake mushrooms until coated.
  3. Place mushrooms on a cookie sheet and bake at 400° for 10 minutes
Pate
  1. Add paté ingredients to a food processer and blend until smooth and a firm texture is reached.
  2. Prepare filling ingredients and set aside.
Roll Preparation
  1. Place a nori sheet onto a bamboo sushi mat.
  2. Spread the spicy almond paté on nori, leaving the top half of the nori sheet uncoated.
  3. Sprinkle the cooked quinoa on top of the paté and follow by arranging the marinated mushrooms on top across the nori sheet.
  4. Complete by adding remaining fillings. Roll by hand, slice and serve with a dipping sauce of Ojio Organic Aminos.
