Cookie Dough
  1. In a medium bowl, whisk flour, baking powder, baking sode, salt, ginger, cinnamon, vanilla, and cloves until well combined.
  2. In a large bowl, beat the egg and mix with coconut oil and palm sugar until well blended.
  3. Add coconut syrup to coconut mixture and mix well.
  4. Gradually add the baking mixture to the other, mix until all ingredients are combined smoothly.
  5. Split raw dough in halt and wrap each in plastic wrap.
  6. Let stand at room temperature for 2 hours (or refrigerate up to 4 days).
Baking Cookies
  1. Preheat oven to 375 degrees.
  2. Prepare a baking sheet with parchment paper.
  3. Sprinkle flour on a flat surface and roll dough flat until 1/4 inch thick.
  4. Cut with cookie cutters and place raw cookies on the baking sheet.
  5. Bake 7-10 minutes, or until either soft or crispy as desired.
  6. Remove cookies from oven and let cool.
  7. Store in airtight container. Enjoy!
